Chicken Dinner
This was yesterday, which was cold and wet and even snowy. I had put the selected roosters up to be killed on Friday but couldn't catch them cleanly and so decided to wait until Saturday morning early. I select who gets killed, chop them and pluck them and husband guts them. I still remember the first time, husband explained to me and two friends who had also wanted to learn how while all of us held a rooster. And I was so impressed with its breathing, with the knowledge that one moment it was alive and another it wasn't and I was the difference and it would then be part of me. It isn't pleasant but I think it is essential. I only did two yesterday.
